Healthy Holiday Recipes: Pumpkin Bread

SURPRISE! Pumpkin Bread

Have you ever wondered what to do with leftover pumpkin? Why, not make Pumpkin Bread. It has so much variety to be eaten as a breakfast, snack or dessert option. Or shared with your neighbors. Most importantly you do not waste any food.

I shared this with my clients. Individually wrapped slices in wax paper and give to your clients or friends. It makes for a sweet gift.Healthy Holiday Pumpkin bread Recipe


2 cups flour

2 cups Pumpkin Puree

1 cup Coconut Blossom Sugar

¾ cup Butter

¼ tsp Salt

2 tbsp Flax Seeds

1 TBSP Pumpkin Spice

2TSP Baking Powder


Preheat oven to 180C (335F). Mix all dry ingredients in a large bowl or mixing bowl. Add the butter, liquids, pumpkin puree and mix until you have a smooth dough consistency. (Note: If it is too runny add more flour. If it is too stiff add more puree.) Fill your rectangular baking ban/form. Bake for 65-70 minutes. (note: Use the “toothpick” method to see if it is finished) Insert toothpick in the center of the bread and take out. If it comes out clean it is finished baking. Place bread on counter to cool.
