Dinner: Holiday Lentil Soup
Soup and winter are a perfect pair. This warm hearty protein packed soup warms the body and calms the mind. The smell of soup brings everyone to the kitchen to ask, “What are you cooking? It smells great!”
Ingredients:
1 Red Bell Pepper
1 Green Bell Pepper
800g diced tomatoes
200g mushrooms
220g Red kidney Beans
220g White Kidney Beans
100g Red Lentils
150g canned corn
2 large Red onions
Directions:
Sauté the onions until brown. Add about 700ml of vegetable broth and 800g diced tomatoes. Add the washed red lentils and cook on high with the lid on for 9 minutes. (note: turn down the heat if the pot is boiling over). Bring to a simmer and add in the beans, bell peppers, corn and mushrooms (note: be creative and think about the festive look of winter using the colors of the vegetables). Season with your favorite spices. Place the lid on the pot and let simmer on low heat for 15 more minutes.
It’s all about options. My husband and children love to add yogurt and cheese. I prefer the clean flavors of the soup. This dish is a winner for everyone to add their own personal touch at the end. Eat. Enjoy.
