Dessert: Easy Holiday Cheesecake
Cheesecake is the perfect dessert during the holiday season in my home. Using gingerbread spice in the crust creates that distinct flavor of the season. Most importantly, it take less than 15 minutes to make.
172 tsp gingerbread spice
50g coconut blossom sugar
500g vanilla soy yogurt
30g vanilla custard powder or Vanilla pudding mix or 30g scratch
½ lemon juice
Preheat oven to 170C (240F). Mix the ingredients for the crust in a food processor or with your hands. Line the cake tin bottom with parchment paper. Press the dough in the tin using a glass or your fingers. Also press it up a bit on the sides. Mix the ingredients for the filling in bowl. Place filling in the pie crust and bake for about 50 minutes. Garnish with warm fruits. Tastes amazing with some warm raspberries.
