Breakfast: Blueberry Zest Pancakes
No matter how old I get. I will always love Blueberry Pancakes. I have taken my mother’s recipe and updated with healthier options without losing the flavor.
Ingredients:
250ml almond milk
1 lemon (used for zest)
120g Spelt flour
100g Blueberries
1 TBSP Baking Powder
Pinch of salt
Pinch of turmeric
Instructions:
Using a whisk, mix spelt flour, baking powder, pinch of turmeric and pinch of salt. Add milk and ½ lemon zest (note: save the other half for decoration at the end.) Let is rest for a few minutes to thicken. Add blueberries, lightly mix. Heat pan to medium or medium high. Pour ¼ pancake mix, per pancake. Flip once several bubbles are visible.
Optional, add the lemon zest on each pancake with your favorite topping (i.e.syrup or honey).
